Chow Mein Chicken Nuggets

I wanted chow mein.  I wanted chicken nuggets.  A legend was born.

I'm a big old fan of experimentation in the kitchen.  Yes, it creates monstrosities such as the "egg white casserole" which came out looking like bird spit pie.  But it also, on rare occasions, creates something so amazingly awesome, I'm surprised it's come out of my kitchen.

Such is the story of the of the Chow Mein Chicken Nuggets.

Pork & Stewed Apple Chunky Soup

Let's get one thing out of the way.  I love soup!  Whilst I've been off sick, I literally had it everyday.  I'm not one to let a little thing like not being able to smell affect the quality of what I'm eating either.  Of course, I had a nice big selection of root vegetables, tomatoes, spices, legumes, herbs & fruits.  Let the soup making commence!

Now, as usual there were some disasters.  Whilst beetroot soup looks very pretty and dyes your lips vibrant purple, if you get the consistency of beets wrong, you're in for a soup that tastes like mud, even through a snotty nose.  Looks amazing, tastes like bog.

Crispy Grilled Pepper Potato Slices.

I'm feeling pretty lucky today, my feet landed firmly on the right side of the bed.  First, I found a fiver whilst 'tidying' my room up.  We won nearly £50 on three scratchcards, the sun is shining, I won a book & I finally got some ground almond to make some cookies this weekend.

Oh, and the biggest thing of all.  My appetite is back.  WHOOPEE!

It flooded back just before I got to my Nan's on Saturday afternoon.  Luckily, my Nan is never short of food.  Before you know it, I was set up, with a packet of biscuits to my left, a diet coke, tea, special K bar and bucket of mints to my right.  My Nan would never let anyone go hungry whilst they are under her roof.  God forbid!

Ergh, what a week.  You may (or may not) have noticed my absence from all things foodie.  No posts, no tweets, not even a check of Facebook. No fear, I haven't roamed off into the realm of "lost food bloggers", a dilapidated world where frustrated and under appreciated food bloggers throw their blogs and dreams with it.

Nah, First I had a funeral, then I was without internet, then I got ill, then I sliced my thumb open and couldn't wield a knife or spoon for a day or two.

Just enough drama to fill a soap opera.  A really boring one.

A Plea on Dairy Free and a Recipe

I'll hold my hand up and be honest.  I haven't actually had the time to cook these past few days.  Once again life gets in the way.  My little list of 'to cook' has pretty much remained the same length.

Before you click that little red x in the corner of your screen, I should probably explain.  I've been away from home and unwell.  Cooking, in fact food in general, has been the furthest thing from my mind.  I'm only just starting to get my appetite back.

So what's the first thing you reach for when recovering from a bout of the poorlies?

Jubilee Baking

Afternoon all.  Today I'm recovering from my four day weekend of celebrations, shopping, Village fairs, baking and general awesomeness.  I'm coming down off a four day sugar high and the hangover does not feel good... but it does feel worth it.  There was a lot of tasting to be done, and a lot of cakes to make.

The best thing about 4 days off from work is that it feels like  mini holiday, and pretty much everyone was getting into the spirit of it all.  Around my way there were street parties (That carried on despite the rain), a Jubilee fayre in my Nan's Village, a 4 day music festival in the park,  so many Union Jack decorations your head would spin and even a parade through our town.

It felt right to make something edible for the occasion, so we opted for cupcakes, Doughnuts & Mexican food (of course, what else to toast the queen but a fajita?)
